-3 unsaturated fatty acids are paid close attention to promote brain growth of fetus and neonate, and be a inhibitor of tumor, inflammatory, coronary heart diseases, atherogensts, hypertension and type II of diabetic metllitus. It is important to increase ~ -3 unsaturated fatty acids content in animal products for their biologic functions. An in vitro and two in vivo trials were conducted to investigate the effects of the combination of vitamin E and vitamin C on lipid oxidation, the accumulation of polyunsaturated fatty acids (PUFA), and the application of PUFA enriched yolk and diet to prevent atherosclerosis of rat.The most optimized supplement of vitamin E and vitamin C as antioxidant could be found by the research of lipid oxidation and antioxidation. PUFA contain several unsaturated double bonds which are susceptible to oxidation. Vitamin E and C are powerful and least toxic. Two factors (Vitamin E and Vitamin C) saturated optimized experimental design was adapted in vitro trial, the maximum and minimum supplement level of vitamin E was 120mg.. 0mg and that of vitamin C was 600mg.. 0mg, respectively. It could be concluded from peroxide value (POV) , iodic value, and tbiobarbituric acid reactive substances (TBAR) numbers that the supplement level of vitamin E and vitamin C in treatment 6 ,83.67mg.. 600.00mg, respectively was the most optimized for antioxidizing. The regress equation by the POV (y) and supplement level of vitamin E (xi) and vitamin C (x2)is:y=0.095-0.O 14x1-0. 1 05x2+O.0 1 8x12+0.003x22+O.025x1x2the optimized result from the regress equation is that the supplement of vitamin E and vitamin C should be 42mg, 600mg/i Og unsaturated lipids, which can be adopted by practice as recommendation of lipid anUoxidation.200 layers were divided into four treatments in layer feeding Uial, layer diets were formulated according to equal nutrients per metabolic energy (ME). Diet composition of the four treatments were 4% flax seed + 9% sunflower seed (deshucked), 8% flax seed + 18% sunflower seed, 15% flax seed , the control diet, respectively.In the whole experimental period, different diets had significant impact on feed intake and feed egg ratio(P< 0. OS),and had no significant different impact on laying rate, egg weight, and broken egg rate. The highest laying rate and the biggest egg weight of treatment 1 which added 4% flax seed +9% sunflower seed was 94.33% and 65.23g , respectively.
