It is important for people's health to development a fast detection technology of pesticide residue in vegetables, which could cause acute food toxicity. In this article, some demerit were discussed about past pesticide residue fast detection technology and a new one was developed and used for vegetable samples detection.Firstly, pesticide residue extraction efficiency of past fast detection technologies was studied. In past the pesticides residue in vegetables was extracted with PBS or methanol solution by simple rinse. In the article, after different concentration of pesticide standard samples was spiked on vegetable surface the extraction efficiency of simple rinse of six kinds of pesticide was ensured by gas chromatography. The results indicate that the extract efficiency of vegetable samples was affected by placed time at room temperature. When placed 2 hours only the extraction efficiency of 6 kinds of pesticides by simple rinse was more than 80 percent but when the placed time was prolonged to more than 4 hours the extraction efficiency declined rapidly to below 40 percent for most pesticides. For this reason a fast extraction technology by a micro-homogenizer was developed and the extraction efficiency could get more than 70 percent for the six kinds of pesticides.Secondly, the acetyl-cholinesterase enzyme (AchE) immobilization technology was studied. Cross-linking was a broadly used enzyme immobilization technology. In this article, the affection factors of immobilized AchE activity for example pH, the concentration of BSA, GA and gelatin were studied. The immobilized AchE by cross-linking maintained more than 60 percent activity after placed in room temperature for 6 months. The immobilized enzyme activity recovery by cross-linking was lower because the bi-functional reagent GA was hurtfully to AchE. Now a kind of photo-crosslinkable polymer PVA-SbQ got recognition on enzyme immobilization. A higher production technology route was explored in laboratory and the product was used to immobilize AchE. The immobilized AchE by PVA-SbQ has higher enzyme activity recovery and more than 70 percent activity was gotten after 6 months placed in room temperature.
