| This paper studied 8 green tea samples collected from different provinces of China ,which processed at the same time. The color(including the dried tea color and the tea infusion color) evaluating system of green tea is formed. Both the relationship of the mental element and the dried tea color, and the relationship of the mental element content in the tea infusion and the tea infusion color have been analyzed by the storage test (300C, l8Odays). The effect of the mental ions ( Fe ,Mn2,Cu2,Zn2,Ca ,Mg )on the stability of the tea infusion is studied. The keeping green effect is examined by adding mental ions during the tea processing. At last, the relationship the mental element content in soil ,tea tree type and the mental element content of tea is studied. The below is conclusion: I .The dried tea color evaluating mutiregress equation Y1120.4879+6.0814X2+O.04758X4?.93279X5, (r2=O.85 13); Y1, the sensory value of the dried tea color; X2, Hunter a; X4, Hunter Cab; X5, Hunter hab. The tea infusion color evaluating beeline regression equation: Y2 1 32.4687-265.3545X, (r20.9072); Y2, the sensory value of the tea infusion color; X, absorption value of the tea infusion at 420nm. 2.Mn,Cu can lower the decline of the dried tea color; Fe,Ca can accelerate the decline of the dried tea color; Zn,Mg have little effect on the decline of the dried tea color. 3.The mechanism: @The dried tea color is notably related to the value of Chla/Chlb, Cu can remarkably slow down the changes of Chla/Chlb, so it can slow down the decline of the dried tea color; Fe can remarkably quicken the changes of Chla/Chlb, so it can quicken the decline of the dried tea color. ã•he dried tea color declined seriously after 120 days. Then, Chla/Chlb has little effect on the dried tea color. And the dried tea color depends on the oxidating, combinating, dissociating degree of Polyphenol, Theme, Protein etal. The role of Fe,Mn,Cu,Zn,Ca,Mg in those Chemical reactions need a further study later. 4.The tea infusion with high content of Cu has good colors. The tea infusion with high content of Fe has bad colors. Ca, Mg, Mn, Zn have little effect on the tea infusion color. 5.Mn2, Cu2 Mgcan keep the tea infusion color. In stabilityorder: CuMg2>Mn2. But Fe3, Mn2 Cu2 Zn2 Ca2 Mg2can spoil the tea infusion color. In destructiveness order: Fe3)Ca2>Zn2. 6. The keeping green effect of the sample added the mental ions during the process of dyenzyme is better than the sample added the mental ions during the process of drying. 7.The two samples respectively added Cu2 Mg2compared with the CK, their contents of Chla,Chlb both increase ,their values of Chla/Chlb also increase, so their dried tea colors look green. The sample added Fe3conipared with the CK, it content of Chia reduces, it value of Chla/Chlb also reduces, so it dried tea color is darken and yellow. The keeping green effects of Mn2 Ca2 Zn2arent remarkable. 8.The higher content of the effective mental element in tea garden soil is, the higher content of the corresponding mental elements in the tea leaf is. The respective r of Fe, Mn, Cu, Zn, Ca, Mg is 0. 9181, 0. 9297, 0. 9252, 0. 9124, 0. 9396, O.9176. So, we can directionally increase the contents of some mental elements by improving the soil fertility of tea... |
