This paper studied application of insoluble chitosan to decolourization and clarification of apple juice. The best technical conditions of preparation and regeneration of chitin and insoluble chitosan were determined. Effects of dosage of insoluble chitosan, temperature, time and pH value on the colourity and clarity of apple juice were investigated. The continuous operation of adsorptive column packed with insoluble chitosan was studied. In addition~ changes of main nutritious factors in the apple juice during insoluble chitosan treatment were analyzed. The result showed that insoluble chitosan of apple juice on the industrial scale can be used for decolourization and clarification.
