Amorphophallus konjac is herbaceous plant of Araceae, it's tubers has polysaccharides, protein, mineral element etc. Konjac glucomman (KGM) is the main component of konjac tuber which is a high molecular weight water-soluble polysaccharides. For has many special physics and chemical identities KGM has being widely used in foodstuff, medicine chemical industry and so on.The distributing of konjac resource is introduced and the application of konjac product and the research of KGM is also be sum up. It is point out that the component analysis of konjac is not sufficient and the analysis of water -soluble protein and some other matter is also necessary. In addition it is vary important to research the dilute solution of KGM.Contents of 12 mineral elements in konjac and its growth soil were determined by inductively coupled plasma atomic emission spedtrometry (ICP-AES) and the relation of them is also discussed. The water-soluble protein and KGM in konjac are determined too.Intrinsic viscosity ([ n ])of dilute solution of KGM is determined by Ubbelodhe viscosimeter, M , Rg, AL., is measured by laser light scatteringthe parameter K, a in MH-equation is calculated, and macromolecule mophology of KGM in dilute solution is studed. The structure and properties of KGM are also characterized by IR, X-ray diffraction, DSC, TGA, and Surface Tension Analyzer.
