Dynamic pasteurization is a new non-thermal process for food preservation. This article studied the deadly dynamic damages on cell's microstructure on lower dynamic actions.Pasteurization tests of Bacillus subtilis by High pressure homogenization were studied on lower dynamics actions.The results show: Death of Bacillus subtilis.caused by damages on its microstructure occurs in lower dynamic actions commonly. High death rate caused by microstructure damages can be achieved on lower dynamic actions. Pressure is not the direct dynamic action that result in cell death.Cell microstructure was studied by Electronic microscope observation after Bacillus subtilis was damaged by dynamic actions. Deadly damages on microstructure are analyzed. The damages include: protoplast run off, cell wall thinned or partly broken, gas room in cell, cell transformed and separation between cytoplasm and cell wall.Dynamic actions that resulted in deadly damages on cell's microstructure were analyzed.The actions mainly include cut, friction, cell explodes, stretch and shake.Cut result in cell bent. Friction result in cell wall thinned and worn out. Stretch result in cell transformed and broken. Explode result in cell bursted and protoplast run off. |
