In order to cut down the consuming time of detecting amylose content in paddy, the thesis carried through such study and discuss as the follows: (1) comparing to four standard methods of detecting amylose in china, experiment indicated that GB/T 15683 - 1995 method is better than others. The method can eliminate the effects of fat, moisture and solvent. (2) using four types of NIR instrument to research on dectecting amylose content , experiment indicated that NIR value was linered with LAB value well, the four types of NIR instrument's error was bigger than 1.0 percent, but judging rank in china require strict precision. NIR instrument predict amylose content in rice is not suit foridentfication rank of paddy in china. (3) A incompletely defatted procedure that all samples were submerged in solvent with heating up was investigated and the method can eliminate the effects of fat among the samples. The method can shorten the consuming time of defatted procedure from 2 hours to 40 minutes. A quick way for eliminate the effects moisture and solvent was recommended that can shorten the consuming time from 48 hours to 30 minutes. The combination of iodin and amylose come into being deposit when the combination's concentration is enough. So a simple method can be developed by titration. Subsequent experiments indicated that this method has smaller errors. (4) Scanner was used to collect the original image of the iodine colored solution and the hue of the image was then identified by the computer. A significant correlationship was shown between the red value and amylose content which is proved to be possible to predict the content of amylose without the conventionally used spectrophotometer. With the advantage of low cost, rapidness, high efficiency, the method is hopefully to be used in trade process.Through the experiments were taken, several solutions were recommended to cut down the consuming time.
