In this study, lactic acid bacteria were isolated from the samples of fresh goat milk and milk products, which collected from four towns in Ba YanNaoer league of Inner Mongolia and their biological properties were studied. 66 strains of bacteria were isolated from 35 samples, among of them 31 strains were lactic acid bacteria. Among of them 20 are bacilli and 11 are cocci. According to their characteristics of morphological, physiological and biochemistry sugar fermentation and amino acid composition of cell wall of bacteria, they were ascribled to 3 genus of Lactobacillus, Enterococcus and Lactococcus, containing with 8 species. Among of 31 strains 15 are Lactobacillus plantarum. 3 are Lactobacillus helevticus. 1 strain of Lactobacillus curvatus, Lactobacillus casei respectively. 7 are Enterococcus faecalis, 1 strain of Enterococcus durans, Enterococcus avium respectively; 2 are Lactococcus lactis subsp lactis. On the whole, the strains tested had the same biological properties in comparison with standard genus and species. The research revealed that the bacteria species of the milk and milk products from the area were dominated by the bacteria colonies of Lactobacillus plantarum and Enterococcus faecalis. At the temperatures of 15℃, 20℃, 40℃ and 45℃ some of these bacteria are able to survive, but 15℃ and 20℃ some of these bacteria are survive weak. Therefore, most of them belong to high-temperature strains. Their rangs of growth was wide. In this study, selection of 14 strains lactic acid bacteria by the bilesalt tolerance and low pH tolerance.
