The main studies of this text were that fragrance compositions of MuscatHambourg grape fruit between pergola and vertical trellis systems in differentgathered period; polyphenol components of Cabernet Sauvignon fruit indifferent gathered period at different load treatment, polyphenol componentsof Cabernet Sauvignon wine at different load treatment, the main results ofstudy were as follows:1. In Muscat Hambourg grape, there were 3 major kinds of volatility materialsamount to 97 kinds, include terpenes, esters, aldehydes, and ketones detectedin grape of the pergola and vertical trellis systems during ripening, including55 terpenes, 28 aldehydes and ketones and 14 esters. The trellis systems hadlittle effect on fragrance compositions of Muscat Hambourg fruit. The aromacomponents in Muscat Hambourg fruit from two kinds of trellis systems wereboth mainly terpenes and aldehydes. It was the geranic acid separately to thearoma components of volatility with important significance of MuscatHambourg fruit, unless α–terpineol, 3,7-dimethyl-1,6-octadien-3-ol,β-myrcene, D-limonene, 3,7-dimethyl-1,5,7-octatrien-3-ol, α-citral,3,7-dimethyl-2,6-octadienal, hexanal, furfural, 2-hexenal and benzeneacetaldehyde.2. To Cabernet Sauvignon, three weeks after veraison, the sugar contents ingrape for the cluster thinning at anthesis were lower than that of eachtreatment at veraison and control, while tartaric acid contents were higher thanthat of each treatment at veraison and control. At maturation, whether or notcluster thinning and cluster thinning at different stage did not affect the sugarcontents. The distal cluster thinning led to a lower level tartaric acid contentsthan that of the basal cluster thinning.three weeks after veraison compared togathered at maturation, the catechins contents decreaded and tended towardsstability.3. Cluster thinning had effect on the quality of the fruit and was an effectivemethod to control the output of grape. As to Cabernet Sauvignon gathered atmaturation, compared with distal cluster thinning and basal cluster thinning atanthesis, little effect on contents of the single polyphenol was found;compared with distal cluster thinning and basal cluster thinning at veraison,the contents of the single polyphenol had obvious differences.
