The technology of purification of dietary fiber (DF) from Pueraia lobata (wild) Ohwi dregs was studied with enzymatic hydrolysis. The technical parameters were optimized by single factor and orthogonal design experiments. It was showed that conditions for purification evaluated by DF swelling ability were mixing enzyme( α -amylase: glucoamylose, 1: 2) amount 0.20%, temperature 70℃, time 80 min treatment and amount 0.40%, temperature 50°C, time 60 min for protein enzyme incubation. The acid detergent DF content of Zhangjiajie cultivated, Yueyang wild, Zhangjiajie wild and Yueyang cultivated DF after incubation of mixing and protain enzymes increased to 78.69 %, 78.41%, 76.34% and 73.11%, respectively. From a nutritional standpoit, dietary fiber from Pueraia lobata (wild) Ohwi dregs may be suitable for food additves.The bleaching effects of H2O2 amount, time, temperature, and pH on dietary fiber were investigated using hydrogen peroxide as bleaching reagent. The optimal conditions for bleaching were confirmed through orthogonal test. The results showed that the effects of the four factors on the Pueraia bleaching ranked in the following order: pH> H2O2 amount> time > temperature and the optimum conditions were H2O2 3.0%, pH 10, temperature 70℃ and time 60 min. Thus, this effect for Pueraia Lobata(wild) ranked in: H2O2>pH>temperature>time and the best conditions were H2O2 3. 0%, pH 10, temperature 70℃and time 60 min.The physical and chemical properties of DF from Zhangjiajie cultivated DF(chemical method), Zhangjiajie cultivated DF(enzymatic method) and Yueyang wild DF(chemical method), Yueyang wild DF (enzymatic method) were analyzed to be water holding capacity 2.08mL/g, 1.86mL/g, 2.63mL/g and 2.54mL/g, swelling capacity 6. 60mL/g, 6.00mL/g, 5. 90mL/g and 6. 40mL/g, water binding capacity 2. 01g/g, 1.87 g/g, 2.11 g/g and 1.91g/g, exchangeable cation capacity 0. 365mmol/g, 0. 359mmol/g, 0. 359mmol/g and 0.366mmol/g, respectively.Sodium nitrite was strongly adsorbed by Zhangjiajie cultivated DF(chemical method), Zhangjiajie cultivated DF(enzymatic method) and Yueyang wild DF(chemical method) , Yueyang wild DF (enzymatic method).
