Along with the change of the store condition and the increase of the store time,the rice seed will be aging. After aging, the edible quality of rice descends, andshould not be eaten as grain ration, so detecting exactly the storage time of rice forcontrolling the grain deposited and assuring edible safety has a very importantmeaning. The paper adopts the color and luster of rice, the conductance rate and thecolor contrast value of the CAT enzyme active in rice as the detecting indexes ofrice aging degree, and with the computer technology, to develop a rapid detectionsystem of rice aging degree. This paper carries out following works mainly, andhas gotten related conclusion:1.The aging methods and detection indexes of the rice study Along withthe aging time increase when the aging condition is different, the content ofreduced sugar in rice goes up gradually and the content of non-reduced sugardrops gradually. The fatty acids value also presents up-trend. The active of theCAT in rice submits depressed tendency obviously. The value of electricalconductivity submits increased tendency obviously. The luster of the rice surfacedisappears basically, becomes yellow gradually, and presents aging feature. Basedon the changing laws of the rice quality, makes sure using the method of got-upaging for the research of the rice aging degree, at the same time, determining thegot-up aging method of the aging rice used in the examination, and using theconstant temperature and constant wet chest for aging examination, and the agingcondition is 35℃, humidity is 80%, the aging time is 6 months. And founding therelation between the normal temperature aging and the got-up aging that 6 monthsin the condition of the normal temperature aging is equal to 1 months in thecondition of the got-up aging.2.The detection methods of the conductance rate of rice study Theconductance rate of rice shows the tendency of rising, following the increase ofsampling quantity, the relation of two is: S = 0.2814m + 1.209;and shows thetendency of rising following the increase of whisking time, the relation of two is: S= 0.2406t + 3.454;and shows the tendency of rising following warm up of testwater, the relation of two is: S = 0.1796T + 2.139;But the conductance rate of ricedoes not increase following the increase of the whisking speed, between of twodoes not have a correlation. When detecting the conductance rate of rice, makescertain 15g rice as sample, selects 30℃ as the water temperature in theexperiments, and whisking time is 20 seconds, whisking speed is two/second.3.The detection methods of the color contrast value of the CAT enzymeactive in rice study The color contrast value of the CAT enzyme active in ricesubmits the tendency of increase following the increase of the consistence ofO-Methoxyphenol liquor and the consistence H2O2 liquor, and presents theincreasing tendency first and reduction later along with the increase of the dosageof H2O2 liquor and the reactivity time. To foresee thedeposit time of rice with multivariate linear regression equation gets regressionequation: T = -35.490 + 0.058R -0 .193I + 0.663L + 1.037S + 0.166E, theaccuracy rate is 75%. To foresee with BP nerve network, the accuracy rate is85.71%. The result is more accurate with the nerve network.5.The development of the fast detection system of rice aging degree Thedetection system adopts the object C++ procedure language for the developmenttool, and completes the system in the VC development terrace. Staff can passthrough keyboard and mouse conveniently, operate for system.
