With the increasing focus on the environment,the food industry and packaging industry are widly concerning about the edible food-packaging material which is also conforming with the green packaging requirement.The polysaccharide has many advantages.The polysaccharide film is one of the developing tendencies of current edible food-packaging film and it has become a popular research focus. In domestic and overseas many researchers now are focusing on strengthening the tensile strength ( TS ) and enhancing water and high-temperature resistant property of polysaccharide films.The glucomannan dissolve in the water easily and have good filming property.The film dissolves in the water easily and its tensile strength is low, the ability in inhibiting pathogens is bad too.This can be improved by some reactions, but they can hardly attain the anticipant result.Because glucomannan is high in konjac, we choose konjac glucomannan(KGM) as the experimental material. This text studied the reaction between KGM and alkali. Some intensifier, plasticizer, obstructer are added in order to attain the anticipant result. The antibiotics can raise compound film's antibiotic action. At last we confirmed the best craft and parameters of the filming in laboratory. The conclusion is(1) The pure konjac powder has good tensile strength (about double to unpured konjac powder). The pure konjac powder also influences the ability of folding number. The change is raised by hydrogen interaction. But the variety of solubility and anti- pathogens is not obvious.(2) The compound film can fix the preservative, and can inhibite Penicillium. From the orthogonal experiments we get the best experiment is A3B3C2. The KGM is 5.0 g/ L, garlic liquor is 1.0 mL/ L, glutin is 1.0 g/ L.(3) From comprehensive analysis, we get glutin is 1.0 g/ L, glycerin is 1.0 mL/ L. The tensile strength of the compound film compared to the KGM film is increasing 27.2%, film thichness is increasing 14.8%, the breaking elongation is only lessening 9.9%. The obstructer is liquid paraffin, its suitable dosage is 0.03 mL/100cm2.(4) Studied the effect of alkali on tensile strength, breaking elongation, moisture absorption, scour resistance and adhesion power of da-KGM film. Within the scope of pH9-12, the alkali has the important function towards raising the mechanical properties of the film. But when pH<9.0, the function is not obvious; pH>12.0 the tensile strength will decline. The content of the alkali influences the moisture absorption with the lessening of the alkali content, the moisture absorption descend heavily. Within the scope of pH8.0-12.5, the alkali can raise the film to defend the humidity. The increase of alkali can raise scour resistance of the compound film, but can't raise the adhesion power.
