| This thesis investigated fresh-keeping processing technology of fresh-cut Gynura divaricata(L.) DC, included washing, fresh and color preservation, packaging, storage. And determining the changes of physiological indices included weight loss, wilting rate, microorganism, vitamin C, reducing sugar content, soluble protein, respiratory intensity, chlorophyll, relative conductivity, MDA content and PPO, SOD, POD, CAT activity during storage time. The main results are as following:1. With Gynura divaricata(L.) DC. as the experiment material, physiology indexes such as weight loss, wilting rate, vitamin C, reducing sugar content, soluble protein content, respiratory intensity, chlorophyll content, relative conductivity, MDA content and SOD, POD, CAT activity were studied under 5±1℃,10±1℃ and room temperature (23±2℃) . Experiment results showed that: 5±1 ℃ low temperature inhibited the respiratory intensity, weight loss and wilting rate and maintained lower levels of membrane permeability and MDA content but higher vitamin C, reducing sugar, soluble protein, chlorophyll contents, and SOD, POD, CAT activity. Therefore, the optimal temperature was 5±1℃, it could delay the senescence process and quality loss and prolong storage life of fresh-cut wild Gynura divaricata(L.) DC..2. This experiment investigated the changes of physiological indices with different washing sanitizers during storage time. Experiment results showed that: 0.2g/L NaClO disposal team maintained the better color and the lower levels of relative conductivity and MDA content but higher chlorophyll content, and inhibited the respiratory intensity, and decreased total count of bacteria of fresh-cut wild Gynura divaricata(L) DC. The effect of decreasing total count of bacteria of 50ml/LH2O2 was better than 0.2g/L NaCIO, but the other physiology indexes were not better than NaCIO.
