Gamma-linolenic acid(GLA), a polyunsaturated fatty acid, is a nutritionally important and essential fatty acid. Producting by microorganism was rather noticeable. In this thesis, production of gamma-linolenic acid by Mucor mucedo was studied.In the liquid state fermentation, the optimal fermentation medium were composed of as follows: maltose 150g/L, (NH4) SO4 3g/L, ZnSO4 0.01g/L, FeSO4 0.016g/L, MnSO4 0.001g/L, KH2PO4 2g/L, MgSO4 0.3g/L.The optimal culture conditions were as follows: pH 5.5, seed culture time 24h , inoculating with suspension spores, inoculum percentage 10%, medium loadage 75ml/250ml flask, it was cultivated at 28°C in the first 72h and then at 26°C in the next 24h. In a 3L fermentor, the maximum biomass in 72 hours was 21.9g/L; the content of lipid in the broth was 0.892 g/L; and the content of GLA was 0.311 g/L.In the solid state fermentation, the optimal medium were composed of as follows: wheal bran: Bean cake: KH2PO4 was 8:1:0.015, 2% starch, 0.6% (NH4)2SO4 ,the ratio of substrate to water was 1:1.5.
