The dimpled vertical plate falling film evaporator is an evaporator which is improved on the plate falling film evaporator. The heat transfer is enhanced because the falling film flow and heat transfer is affected by the special configuration of dimpled plate.In the paper, the dimpled vertical plate falling film evaporator is applied to and condense pineapple. In the concentration process, the hydrodynamics and heat transfer characteristics and the status of preventing and cleaning fouls are theoretical analyzed and experimental studied. At the same time, the primary factors which influent the evaporation and condensation are studied either.Considering industry practicality, based on the theory of falling film flow and heat transfer and with a view to the present studies, an analytical mathematical model is founded in the turbulent flow regime. In addition, the heat transfer correlations of dimpled vertical plate falling film evaporator are obtained through experimental studies.The studies indicate that the dimpled vertical plate falling film evaporator has good synthetic performance, specially adapted to evaporate and condense heat sensitive matter, such as syrup juice etc. the mathematical model and correlations mentioned above, are in good agreement with the experimental results and can facilitate the engineering design.
