The paper used tomato seeds which was produced in Xinjiang tomato paste industry as raw material to extract tomato seed oil by traditional solvent method.Different factors that had effect on the extraction and refining efficiency were systematically studied.The extraction and refining conditions were optimized.The physicochemical properties of tomato seed and tomato seed oil were determined.The fatty acid composition and vitamine E content was inspected.The choice of antioxidants were conducted.The research results showed that the moisture in tomato seed oil was 6.65%,volatile matter was 5.26%,carbohydrate was 21.62%,protein was 36.80%,crude fat was 29.67%.The result indicated that tomato seeds was valuable oil's natural resources.Optimal extraction condition was ascertained based on single factor tests:temperature was 50℃,for one hour every times,ratio of material to liquid was 1:10(W/V),Under these conditions,the extraction rate was more than 27%.The Sensory Quality and physicochemical properties of tomato seed oil extracted by solvent method did not coincide with the standard about edible oil,therefore ,it must be refined after extraction.Optimal degumming tomato seed oil was obtained afer distillated water with 80℃,4% weight of oil was added in 70℃crude oil.The refined tomato seed oil was obtained by alkali refining method with the following optimum codition:the alkali concentration was 9.5%,the temperature of chemical saponification was 45℃, alkali quantity to oil was 0.3%,then the ideal refined oil was acquired.In the physicochemical properties of tomato oil, relative density was 0.9180,refractive index was 1.4718,acid value was 0.7513mgKOH/g,saponification value was 189.5mgKOH/g,iodine value was122.0gI/100g,peroxide value was 11.89meq/kg,which was close to normal vegetable oil.11 kinds of fatty acids were inspected by GC/MS, The content of linoleic acid was 49.27%,oleic acid was 8.38%,palmiyic acid was 16.04%, stearic acid was 5.71%,andα–linolenic was 2.04%, The content of unsaturated fatty acids in tomato seed oil was 77.65%;The content of vitamine E was 40.76mg/100g by HPLC analysis method.The result indicated that tomato seed oil will be good-quality edible oil.The oxidative stability of the oil had been studied by schaal oven test.The result showed that tomato seed oil was instability oil,it must be added antioxidants to avoid oxidation afer refing.The research revealed that TBHQ was the best one of the antioxidants choiced.
