Superoxide dismutase (SOD) is metal enzyme which broadlyexists in animals, plants, and microorganisms .It containsCu,Zn-SOD,Mn-SOD and Fe-SOD which cause the disproportionationof superoxide anion radicals, O2-,to take place by catalyzingso as to clean O2-.Therefore,it can guard against oxygenpoison ,strengthen resistance to radiation damage anddelaysenility. It has good cure effects in some tumors ,inflammatory diseases and self-immunity diseases. It is one ofthe main antioxidants in organism ,which is widely used inmedicine , food, cosmetic and agriculture with its importantphysiologic function 。 In this paper the SOD and biomashigh-producing strain, was obtained from ten strains ofyeasts through common on screening tests and the optimalmediumcomposition of this strain, PH value, fermentation time and themethod of breaking cell walls etec.were studied .
