In this paper, the nature and application of L-lactic acid are conveyed at first. Combining with the practical situation of GuangXi province, cane sugar is used as a abundant and cheap resource to ferment L-lactic acid. This paper focused on the selection and identify of the L-lactic acid producing bacteria, breeding the strain and studying the fermentation substrate and cultivation condition of the mutant strain. The detailed contents were as followed:1. As the size of the clarity circle in the culture plate was the indicative index, 120 strains producing acid were obtained ,Through the test of a serieses of culture plate, 10 strains were chosen. The ingredients of the fermentation liquid was examined by HPLC chromatograph and paper chromatograph, After repeat selection, examining the output of strains and the isomer of the production, combining the strains' stability, the stain named LAB1 was selected for further studied.
