After absorbing simulate rice wine sample with 7 kinds of resin, 6# resin was selected with the best absorbing rate(62.8%) of higher alcohol. And the absorption shows that 6# resin has little effect on esters in rice wine. Therefore, 6# resin is the selected resin for use.After orthogonal desighed absorbing experiment of simulate rice wine samples of different alcohol content and different pH value, the end absorbing condition of 6# resin is when alcohol content is 10%~20%, under natural pH and at 20℃. When 5% addition of resin staticly absorbing samples for 40min, the higher alcohol removal rate got is 62.39%. And when it comes to dynamic absorption of simulate rice wine samples, the removal rate got is 76.80% under the flow rate of 3.05m/h.Using 6# resin to absorb rice wine samples staticly and dynamicly. Under static absorption the higher removal rate of higher alcohol(47.86%) is got when adding 5% resin and absorbing for 20min. And under dynamic absorption the higher removal rate is 68.2% at a folw rate of 4.0m/h. And after absorption under these condition, the treated rice wine has very litter change in its various kinds of physicochemical index. There is little effection on taste,either.After saturatedly absorbing higher alcohol, the resin can be activated by normal method, water-boiling method and steaming activation. Comparing these methods, normal activation is choosed.Using resin to reduce higher alcohol in rice wine is a very simple and effective method. This study provided a practical foundation for this method. And this can somehow protect the health of consumers, and also increase the product quality and promot the benefit of companies. |
