Original peach gum is the solid material coming from the effluence of peach tree [Prunus persica(L.)Batsch]. It has no good water-soluble quality and value in industry. This study dealt with the process of commercial peach gum, including hydrolyzing by acid and alkali, de-coloration, removing minerals, and the optimized processing parameters. Commercial peach gum is found to use as thinker, emulsifier, wall material of microcapsule and other additives. In addition, the percentage of monosaccharides of peach gum and commercial peach gum was analyzed respectively by Capillary Electrophoresis ( CE ) and Ion chromatography (IE ) method. The main results were obtained as below,1 ,When the original peach gum was hydrolyzed by acid, the value of viscosity and reducing sugar were different at different pH and time, but the original peach gum turned into monosaccharides completely at last. In the way, it will never produce commercial peach gum. When the original peach gum was hydrolyzed by alkaline, it can produce stable and good water-solubility commercial peach gum solution. The optimized process was selected by orthogonal design: at 85~90℃, 4%5% content of original peach gum, pH1011, 18~24h.2,The active carbon was utilized for de-coloration. The optimum conditions were selected by orthogonal design with discoloration ratio as index. The results showed that the optimum conditions were 60℃, pH=4.0, 1.5% amount of active carbon, and 30min treat time. More than 79% of the discoloration ratio was obtained at the optimum conditions.In addition, it was found that anion exchange resin D201and D301 were suitable to de-color the hydrolyzing solution of original peach gum.3, After the hydrolyzing solution of peach gum was neutralized with acid, someminerals were must be removed.
