A large amount of kitchen wastes were produced annually in China, which were the main sources of decay, odor and leachate due to their high volatile solids and moisture content. Nowadays, the practical treatments are mainly landfill, incineration, compost and anaerobic digestion. Compared to other technologies, it was considered to be effective using anaerobic digestion as a means of reducing the volume of kitchen wastes and generating methane biogas for energy recovery. Anaerobic digestion is a novel technology for the treatment of kitchen wastes, so there are many aspects need to be improved. The hydrolysis and acidification are important phases of anaerobic digestion, the study on them will increase the removal of organic wastes and methane generation. Thus, this study is meaningful to recourse recovery of kitchen wastes.The increase of VFA in the hydrolysis and acidification will help the sequential methanogenesis.
