The milling degree of rice is an important parameter of rice quality. The higher milling degree of rice shows not only better appearance, but also more appetizing and more welcome by consumers. At present, the evaluation of milling degree of rice is conducted by manual method in almost all country. To control the milling degree of rice, an operator usually has to firstly judge the milling degree by sense and then adjust the outlet pressure of milling machine. Since this manual method of judging milling degree is subjective but objective, it is difficulty to realize the automatic control of rice milling. Therefore, an objective standard and quantificational method of assessing milling degree has been urgently requirement to guarantee milling quality and realize rice automatically milling.A rice processing enterprise generally uses fixed variety and origin paddy by a given milling method. There are relationships between the nutrition content of rice surface and milling degree of this rice. Therefore, we can decide the current milling degree of the rice by measurement of the nutrition content of rice surface. The spectral analysis technology can be employed in analysis of chemical composition content. The application of spectral analysis to determination of the rice surface nutrition content will leads to a judgment of the milling degree of rice, and, moreover, the formulation of a objective grading standard of rice milling degree. Then realize online examination of milling degree.The hardware system consists of a 722-type spectrophotometer, a step motor, interface circuit and the microcomputer. A program was developed based on Microsoft Visual C++6.0 for control of the step motor and reading the data from the spectrophotometer. The Wu Yujing 13th was used as experimental materials. To begin with, the experimental materials were processed to different milling degree for by grinding machine and milling machine according to the process of rice milling. Then the processed experimental materials were immersed in hexamethylene alkylthe, aether, Chloroform, Carbon tetrachloride and distilled water respectively to extract surface nutriment of rice. The best solvent was determined by many times test.
