In this study, six emasculate health Gannan Tibetan sheeps and six Mongolian sheeps were selected randomly with 1 years from the field in Gannan hezuo regiom and three local cattle were selected as comparison. They were butchered together and some studies were tested and analysed, such as separating serum, weight, meat quality, serum biochemistry indices, with the amino acid autoanalyzer, the flame atom absorption spectrophoto meter, the highly effective liquid phase colorspectrometer, the solid phase micro extract, the gas chromatography -mass spectrum association and so on the advanced instrument. And some correlation were analysed.Front the Gannan Tibetan sheep butchers the live weight is 38.2kg, thetorso body weight is 18.13kg, the meat again is only 12.72kg,remarkably is higher than the comparison group(P<0.05).The eye-flesh area is 19.33cm2, also assumes the extremely remarkable difference (P<0.05). Slaughtering rate is 47.51%.The Gannan Tibetan sheep Gannan Tibetan sheep contains water is 73.59g/100g, does the material content is 26.41g /100g, the proteincontent is 22.45g /100g, the fat content is 2.94g /100g, the ashcontent is 0.98g/100g, the Cu content respectively is 2.1373mg/kg, theFe content is 1.2592mg/kg, the existence remarkable difference(P﹤0.05). The Kelement content is 395mg/kg, the Zn content is 15.9713mg/kg, thetotal amino acid is 90.26g /100g, the essential amino acids (EAA)thecontent is 34.0g/100g, with the meat fragrance related amino acid (Asp,Glu,Phe,Val,Ser,His,Met,Ile)the content is 43.96g/100g, the scoring approachesthe FAO pattern, the VA content is 21.9847 ug/100g, the VE content is0.2616 ug/100g, the VB1 content is 0.15525 ug/100g, the VB2 content is 0.1961 ug/100g, the VB5 content is 4.27795 ug/100g, the VB6 content is0.3041 ug/100g, the VB3 content is 0.43355 ug/100g, the VB11 contentis 0.0082 ug/100g.So the Tibetan sheep is a kind of food with high protein nature, the low fat, themineral element content is high; The amino acid,the vitamin contentare rich,has the higher nutritional value.Gannan Tibetan sheep luster dark red, remarkably is higher than thecomparison group (P﹤0.05), the Dali grain grades lowly, the musclefiber diameter is 18.6m, tenderness shearing force is 6.401 Kg/cm2,dehydration rate 27.5%, is the water power 59.83%, the cooked meatrate 63.76%, remarkably is lower than the comparison group(P﹤0.05).The main flavor ingredient In the Gannan Tibetan sheep,the alkane is 30 kinds,the alkene is 11 kinds, the mellow is 18 kinds, the aldehyde is 9 kinds, the alkone is 4 kinds, the ether is 4 kinds, the ester is 6kinds, the acid is 5 kinds. Therefore Tibetan sheep compared to Mongolian mutton tasty many.To the sample in ACP, AKP, GOT, GPT, LD, LDH, CK, AMS and so on 13 items of blood serums enzymes and GH, T3, T4, INS and so on 4 item ofblood serums hormones carry on the determination, the alkalinityphosphatase (content)remarkably is higher than the comparison group(P﹤0.05), the blood serum total protein (content)extremelyremarkably is higher than the comparison group (P﹤0.01), theamylase (content)remarkably is lower than the comparison group(P﹤0.05), the creatine activating enzyme (content)extremelyremarkably is lower than the comparison group (P﹤0.01), othertarget differences are not remarkable.
