Research on antioxidation of extraction by different alcohol, the oil by supercritical fluid carbon dioxide in oat bran and mixture of fatty acid from the oat oil .At the same time ,the total phenolic in different alcohol has been measured then qualitative and quantitative analysis by gas chromatography and gas chromatography–mass spectrometry of oat bran oil ,mixture of fatty acid from oat bran oil and enrichment of unsaturated fatty acid via urea clathcation.So the style and relative content of unsaturated fatty acid could be determined.The experimental results indicate that the extraction of oat bran or defat oat bran by different alcohol, the extract by methanol was superior to others in anti-oxidation, meanwhile ,the antioxidant activity was improved with the increases of extract addition. In general, the extract of oat bran by two treatment the total phenolic content was: methanol extract 0.28mg/mL, ethanol extract 0.15mg/mL, opropanol extract 0.11mg/mL respectively. The anti-oxidation of oat bran oil was better than the mixture of fatty acid from oil in certain degree.The optimal technology parameters of extracting oil by SCF-CO2 were pressure 30Mpa, temperature 40℃and time 2 hours,then the rate of oil 6.45% under the given optimalcondition. By gas chromatography-mass spectrometry, the result of analysis is that the main competent of oat bran oil are fatty acids, and among of them is the palmitic acid, the oleic acid, the linoleic acid,the stearic acid, 8, 11- eicosadienoic Acid, the linolenic acid, the sinapinic acid, and the relative content of them is respectively 16.38%, 40.66%, 35.8%,.22%th, 1.87%, 1.72%, 1.75%. At the same time , the unsaturated fatty acid made up the majority and the relative content reach to 82.07%.The optimal condition to extract mixture of fatty acid from oat bran oil via saponification is solvent to solid ratio 1:7,the temperature of saponification 80℃,the time 1h, and the rate of mixed fatty acid 94.2% under the given optimum condition after saponification then acidification.And the content of unsaturated fatty acid accounts for 82.44%,mainly the oleic acid, the linoleic acid,and the content of them respectively 41.22%.The order of effects on unsaturated fatty acid by respective factor via Urea Inclusion was:Fatty acid/Urea,Inclusion time,Inclusion tempreature,Urea/ethanol,.At the same time, the yield was considerated and the optimum technological parameters was Fatty acid /Urea 1:3, Inclusion time12h, Inclusion temperature 0℃, Urea/ethano l1:3,and the rate was 15.6% under the optimum operation conditions.The enrichment of unsaturated fatty acid was mostly inoleic acid via analysis by GC-MS,and its content was improved from 40.66% in oat bran oil to 91.8% after enrichment by Urea clathration.The result of experiment with Urea inclusion show high yield and this method is simple. The cost is low, the effect is good and it has little toxicity.
