Garlic is the necessary condiment on people's table, and is one of the medicinal materials which have been used by people for a long time. It is not only used for food but also used for medicinal materials.The effective components in garlic are donominated garlic oil. It is a complicated admixture and has a lot of physiological functions. Especially in restraining bacteriums and tumours.So the Garlic oil has a grate investigation value.Using garlic as the main material, the extraction and microcapsule of donominated garlic oil were studied by the means of water distilling extration & organic solvent extration and spray drying respecitvely.The result showed as follows:(1) The optimal parameters of extraction are studied. The best parameters of organic solvent (ethanol) extraction were as follows: choose ethanol as the extraction liquid, enzymolysis time was 50min, enzymolysis temperature was 38℃, extration time was 1.5h, extration temperature was 44℃; The best parameters of water distilling extraction were as follows:: enzymolysis time was 10min, enzymolysis temperature was 38℃, water distilling time was 1.5h, ratio of material and water 1:1.(2)The optimal parameters of microcapsule are studied. The best parameters were as follows:combination of 85% ( Aribia glue : matter A as 5 : 5 ) +15%(sugar+monosodium glutamate+salt)combination, ratio of core material and wall material was 20%, content of solid substance was 25%, HLB was 12.9; using the lactose, salt, gourmet powder as ingredients, total content of solid substance come up to 20%. Base on the best parameters, ratio of microencapsulation was 81.4%, solubility was 94.73%. According to GB/T18738-2006, it is a standard product when the solubility comes up to 92%. And the product has the typical shape of microcapsule when it is tested by electron microscopy about II powder of soy milk, and when the solubility comes up to 88%. the product has the typical shape of microcapsule when it is tested by electron microscopy. About I powder of soy milk. So the microcapsule has a character of easy dissolve. From observing microcapsule with electron microscope, it has the typical form of microcapsule, and it is a successful microcapsule. (3) The optimal parameters of quanlity are studied. The results indicated that, the quality of organic solvent extration was better than that of water distilling extration, and the stablity of organic solvent extration was also better than that of water distilling extration; the effective component of microcapsule was DADS, it can resolve in water easily and hygroscopic rapidly.The better placed environment was cold and dry.
