Octopus flesh is delicious and nutritious,which has high economic value.Its deep-processing products with bright color,especially the octopus arms with special texture and taste are popular with consumers in Japan,Korea,Europe and the United States.However,the color of processed octopus products in China is too dark or too light,unstable,even fades in a short time,which negatively affects the consumption of these kinds products and the benefits of the cephalopod exporter.Therefore,studies on the color development and protection of octopus are significant.This dissertation analyzed the nutrition ingredient of octopus muscle, and established the color development and protection technique based on the sampling study.Taking sodium pyrophosphate,sodium erythorbate, sodium hyposulfate and heated time as the color development technique parameter and taking soaking time,sodium erythorbate,and sodium hexametaphophate as the color protection technique parameter, Response Surface Methodology(RSM) analysises were performed based on single factor experiment,respectively.The optimum condition was obtained.The stability of color and quality of the samples treated under the optimum conditions was investigated at 4℃±1℃.The results are as follows:1.The study on the color difference analysis in different location of octopus arms showed that 3-6 cm protuberance from the root of octopus arms was representative.2.The permitted range of the color difference is AE≤5.6 through significance analysis and multiple comparison lines analysis of the results in the color development experiment.Through the single factor experiment and RSM analysis,the optimum process conditions were as followes:sodium pyrophosphate of 0.086%,sodium erythorbate of 0.127%,sodium hyposulfate of 0.060% and heated time of 5.5 min.The equation between experimental factors and the response value was as follows:Y=78.023852-547.644748X1-359.984155X2-182.505988X3-8.27159 0X4+1771.519264X12+2027.343750X2X1+951.477981X22-787.500000X 3X1-1779.687500X3X2+3969.777403X32+5.875000X4X1+9.171875X4X2 -0.187500X4X3+0.599524X42; 3.Through the single factor experiment and RSM analysis in the experiment of color protection,the optimum conditions were as followes: soaking time of 4.6 min,sodium erythorbate of 0.061%and sodium hexametaphophate of 0.04%.The equation between experimental factors and the response value was as follows:Y=7.272094-0.208998X1-99.491142X2-44.086223X3+0.025123X12+ 0.531250X2X1+646.516762X22-1.343750X3X1+465.625000X3X2+276.69 4277X32;4.The result of stability experiment at 4℃±1℃showed that the color development and protection technology made the color of octopus arms bright and stable.And the products meet the foreign customer's need.
