The paper chose amophophallus gum as the main wall material to prepare sweet orange oil microcapsules by spray drying and get several Conclusions after optimize the process and Analysis the samples.1. The apparent viscosity of amophophallus gum solution is very high, but the complex cellulase can put the apparent viscosity down by the enzymolysis. The apparent viscosity of 10% amophophallus gum solution can decreased to 100 mPa·S by the enzymolysis of complex cellulase and Satisfy the requirement about apparent viscosity for spray drying.2. The process that amophophallus gum sweet orange oil microcapsules prepared by spray drying is optimized, and its embedding rate can reach 82.08%. The main process conditions are as following: concentration of amophophallus gum solution 10%, apparent viscosity of amophophallus gum solution 200 mPa·S, the ratio of sweet orange oil to amophophallus gum 1/5, 9min on 14000r/min and 200mL by high shear dispersing machine, spray drying: inlet temperature 160℃, inlet flow 0.6m3/min, feeding rate 400mL/h, spray pressure 220kPa.3. Embedding rate can increase when amophophallus gum remixed with arabic gum, purity gum, maltodextrin. The embedding rate can reach 93.43% when amophophallus gum remix with arabic gum by the ratio of 8/2, can reach 90.49% when amophophallus gum remix with purity gum by the ratio of 8/2, and can reach 88.73% when amophophallus gum remix with maltodextrin by the ratio of 6/4.4. The components of sweet orange oil in each sample have been show by GC-MS. The components of sweet orange oil encapsulated by amophophallus gum, arabic gum, purity gum, maltodextrin are compared. The size order of protection ability to sweet orange oil is purity gum >amophophallus gum>arabic gum>maltodextrin. When amophophallus gum remixed with arabic gum, purity gum, maltodextrin, their protection ability to sweet orange oil have no synergistic effect, the size of their protection ability is related to the kinds of two wall material, and is not related to the ratio of two kind of wall material.5. Sweet orange oil microcapsules prepared by the wall material of amophophallus gum, amophophallus gum remixed with arabic gum, amophophallus gum remixed with purity gum , amophophallus gum remixed with maltodextrin have been observed. The surface of microcapsules of all samples is smooth, and have a Few concave points, their particle size is within 20μm. The results show that microcapsulation of sweet orange oil is very successful.6. The prevent-release effect of sweet orange oil microcapsules prepared by the wall material of amophophallus gum, amophophallus gum remixed with arabic gum, amophophallus gum remixed with purity gum , amophophallus gum remixed with maltodextrin have been tested, the results show that all of they have good prevent-release effect, they can keep sweet orange oil well in 105℃. The different of fast release temperature range in higher temperature show that the size order of protection ability to sweet orange oil is amophophallus gum remixed with arabic gum > amophophallus gum remixed with purity gum > amophophallus gum>amophophallus gum remixed with maltodextrin.
