Study On Extraction Technic And Its Stability Of Mulberry Pigment

Mulberry is great origination of natural pigment,take ethanol as the extractant of mulberry pigment and orthogonal design method was applied in studing the parameters of the technology of mulberry pigment.At the same time,taking water as solvent,associated wifh the method of microware,ultrasonic extraction.The best extracted condition were showed as follows:the volume ratio of stuff and liquid 1: 50,the temperature 60℃,the time of ultrasonic procession 20min,the wltrasint power 600 W,the extracted rate is 2.74 mg/g.pH was a significant factor on the stability of mulberry pigment and it should be used under the acid circumstance;the absorbency of mulberry pigment increased after added sucrose and glucose,the concentration of salt was 4%which also could do it; Sodium sulfite and H₂O₂ enhanced the fading of mulberry pigment solution; Ascorbic Aicd had the same effect;Benzoic Acid and Potassium sorbate have no influence on the stability of mulberry pigment during standard range;Ca²⁺,Cu²⁺,Fe²⁺,Mg²⁺,Zn²⁺ and Mn²⁺ have no influence on it,but Fe³⁺ was able to cause brown in mulberry pigment solution.
