Chitosan, the deacetylated derivative of chitin,is one of the abundant renewable nontoxic and biodegradable carbohydrate polymers.It has received much attention in many fields due to the distinct physiologic activities and potential functions.In this paper,the development process,anti-oxidizability of chewing gum with functional chitosan were studied.On the basis of successfully developed the small sample of buccal tablet with chitosan,we have studied its semi-works production.we studied the fabrication technique of the gum-sweets with functional chitosan by means of a series of mixture,decoction,cooling and molding.The optimum ingredients for the preparation were found as follows:gelatin-modified starches 100g,chitosan 10.0g,citric acid 15.0g,xylitol 150g,gelatin 5.0g, menthol 0.5g , peppermint vegetable oil 1.5ml , oil of eucalyptus 1.0ml ,Acesulfame-k 0.5g,sucrose ester 0.1g,glycerol monostearate 0.1g and water 500ml.The gum-sweets has the favorable flavor.It has the attractive fragrance,natural colour and luster,and also the well-proportioned thickness and appropriate sweet taste.The gum-sweets is palatable savory.We studied the buccal tablet with chitosan to refer to the preparation of tablet in medical,fabrication technique of.The optimum ingredients for the preparation were found as follows:chitosan 5.4g,starches 40g,xylitol 40g,maltodextrin 26g,konjak flour 2g,CMC 0.7g,Acesulfame-k 0.8g,Sodium Cyclamate 0.65g,peppermint vegetable oil 0.015ml , menthol 0.0325g , the right amountβ-cyclodextrin,Magnesium stearate 0.75%.The buccaltablet has the favorable flavor.It has the accordant shape,tidy surface and border,natural colour and luster,and also the well-proportioned thickness and appropriate sweet taste.The buccal tablet is palatable savory.On the basis of successfully developed the small sample of buccal tablet with citosan,we have studied semi-works production.The buccaltablet has the favorable flavor.It has the accordant shape,tidy surface and border,natural colour and luster,and also the well-proportioned thickness and appropriate sweet taste.The pilot testing indicated that the processing technology and routine was feasible.Finally,the anti-oxidizability of chewing gum with functional chitosan was studied in this part.From the experiment we fond that chewing gum with functional chitosan was the antioxidant which was with the equivalent antioxidant punch of vitamin C.
