Bean dregs is rich in resources in our country, but the content of soluble dietary fiber is very low. With soybean dregs as material. In order to improve the content of soluble dietary fiber, We were using microbial fermentation and high-temperature cooking combination of ultra-high pressure micro-fluidization technology and centrifuge technology, so that the soluble dietary fiber content has been greatly improved. This paper discussed the extraction process of soluble dietary fiber (SDF), physical and chemical properties and its effects on reducing blood lipid and blood sugar in Kunming mice. The experimental results of this paper are hereby showed as follows:1.The extraction technology was determined and optimized by the study. The microbe fermentation parameters were fermentation temperature at 32℃, Fungi ratio 1:1, inoculation amount 4%,the bean dregs concentration of 20%, under such conditions, the yield rate of SDF reaches to 27.56%.2.Research show that the microbial fermentation of soluble fiber was high-quality products.Through the study of the soybean dregs extraction, based on the combination of high-temperature steaming, centrifugal separation with instantaneous high pressure mechanism, and separating the soybean dregs' extract by high speed centrifugation , the optimal technological parameters were determined as: instantaneous high pressure 80MPa ,high-temperature steaming 20 min, temperature 100℃, centrifugal rotational speed 4800r/min.After centrifugal separation, the SDF purity was up to 90%. This method obviously reduced the reagent.3.The analysis of the monosaccharide components by experimental measurements showed that the monosaccharide components of soybean dregs were mostly galactose, glucose, arabi-nose and xylose. The rheological curves were obtained with different concentration, temperature and conditions, concluding that in certain concentration, the soybean dregs solution had pseudoplastic fluid' s characteristics, and discussing the influences of temperature and PH on solubility of soybean dregs soluble fiber. 4.This paper researched on the function of soybean dregs with respective studies of effect of soluble dietary fiber on reducing blood lipid and blood sugar in mice. The result showed that SDF had outstanding impact on reducing blood lipid and blood sugar whereas the insoluble dietary fiber had little influence.
