A new chain fish slitter had been designed and manufactured which is based on the research of characteristic parameters of silver carp and fresh-water bream.This equipment is suitable for fresh-water fish processing in practicality,which has many advantages,including low manufacturing cost,compact structure,small volume,low power consumption and high productivity.It is safe and reliable for operation,convenient for feedstock and aggregation,low mechanical damage for fish slitting.And it also can slit other kinds of fish by changing clamping pieces and adjusting relational technical parameters,such as slitting depth,guide rails distance,etc.In addition,the key technical parameters of the new equipment are as follows:the size is 2.0m×0.7m×0.9m,the power rating is 1.85kw,and the productivity is around 900 fish per hour.The modern design methods,including virtual design and modular design,etc.,were utilized in this thesis to provide theoretical analysis and optimal design to the fish slitter, with 3D model drawing,virtual assembly,interference check,and 2D engineering drawing.Moreover,there are several modules in the machine,including slitting system, conveying system,clamping pieces,feedstock system and discharge system,which were manufactured with the design result and tested for performance.The way of slitting the fish from head to tail along the back,which can attain fine slitting effect and ensure the flavor of slit fish unchanged,and would not damage viscus of fish(gallbladder in particular),was applied in the machine.The result of slitting test showed that the type of slit rotary saw had little influence on slitting rate,but great influence to slitting loss rate and quality of slitting surface.Specifically,bigger sawtooth could get higher slitting rate and loss rate,and much rougher slitting surface,but the rotary saw without sawtooth can not slit fish completely.And the rotary saw with small sawtooth,which was fit for the fish slitter,may get slitting rate at 83.90±2.31%,loss rate at only 0.62±0.15%for silver carp and 0.85±0.28%for fresh-water bream,still rather smooth slitting surface,and make viscus easily get rid of the slitting fish,which is propitious to continued curing and atmospheric drying etc.Moreover,when the inclination angle of clamping pieces was 16°,the machine would attain great slitting status on fresh-water bream,which can satisfy the machining requests of fish processing enterprise. In order to obtain excellent slitting effect,functional tests of the fish slitter were carried out to determine processing technology parameters.It was found that the optimum position parameter of feedstock system collided block,at which the fish could be feed to clamping pieces accurately with a good consistency,also the slitting quality and stability could be improved,was b=225±5mm for slitting silver carp,and b=180±5mm for slitting fresh-water bream.And the optimum distance of guide rails,at which the fish could be gripped tightly by clamp pieces with less deformation,was d=41mm for slitting silver carp,and d=32mm for slitting fresh-water bream.In addition,for both kinds of fish, when the position parameter of discharge chute is optimum at h=65mm,the slitting fish could discharge smoothly with excellent effect.
