Honey and tea are the nutritional quality goods that people recognize. In order to improve the level of deep processing of our honey and the effective use of middle and low tea, increase the market competitiveness of the two, in this paper, longan honey and oolong tea(tieguanyin tea) were used as raw material, and the spray drying processing technology on honey-tea powder was studied preliminarily, the major results were as follows:1. Using different proportions of honey, water extract of tea and accessories, orthogonal experiments were carried out. The products were assessed by the sensory evaluation. As a result, the best recipe of honey-tea powder was: honey content of 25 g, water extract of tea content of 250 mL(contains 7.5g water extraction of tieguanyin tea), accessories content of 20 g.2. The influence of diffierent factors (maltdextrin,β-cyclodextrin, edible gelatin, soluble starch) on the viscidity of solution, powder yield, water content and solubility were instituted. Based on the single factor experiments, the orthogonal experiments were carried out. Considering the effects on the honey-tea powder yield, solubility and water content, finally the best formula of honey-tea powder of accessories was determined: maltdextrin content of 23.01%,β-cyclodextrin content of 4.6%, edible gelatin content of 1.28%, soluble starch content of 9.2%.3. Based on the optimal formula, evaluated by the yield of honey-tea powder and water content, spray drying process parameters were studied by the single factor experiments. Considering the effects of feed concentration, inlet temperature, feed quantity and compressed air flow on the honey-tea powder yiele, water content and sensory evaluation, the optimum spray drying conditions by orthogonal experiment was: feed concentration was 25%, inlet temperature was 180℃, feed quantity was 16 mL/min, compressed air flow was 800 L/h.4. The physical and chemical properties of honey tea powder obtained with the best formula and the best process parameters were tested. It showed that the honey-tea powder had good solubility, dispersion and stability, the change of the main nutritional components before and after spray drying was not significant.
