Objective:Studies on the Technology of Extracting Dietary Fiber from Banana peel and Its Characteristics and Functions were conducted, in order to provide theoretical evidences for utilizing the banana waste and increasing the added value of the byproduct which is from the deep-process product of banana, This study was also to provide the instruction for exploring the fruit and vegetables residual.Methods:1 Studies on the biologic enzyme method of extracting Dietary Fiber from Banana peel::In this procedure, starch and protein in banana peel was removed by using amylase and protease respectively. To optimize the extraction technology,Type L18 (34) orthogonal test was used with the amount of enzyme, time, pH and temperature.The concentration of soluble dietary were used as the optimization index.2 Study on the maturation effection on dietary fiber in banana peel:In this procedure,starch and protein in banana peel was removed by using amylase and protease respectively.single factor experiments was used to examine the maturation effection on the content and the physicochemical characteristics of banana peel dietary fiber.3 Study on properties of Enzymatic Hydrolysis of Cellulose:insoluble dietary fiber (IDF1) of banana peel was used as raw material, and it is hydrolysised by cellulase. This study investigates the extraction rate of banana peel SDF by single-factor method and orthogonal array design.4 Study on the denaturalization of banana peel dietary fiber by using the pretreatment of Ultrasonic Dispersion and Botulinum Cook:The banana peel powder is pretreated by using Ultrasonic Dispersion and Botulinum Cook, and then starch and protein in banana peel was removed by using amylase and protease respectively, to identify the influence of the pretreatment on the yield of banana peel SDF.The research uses single-factor method and orthogonal array design under the fixed power of Ultrasonic Dispersion.5 Study on the physicochemical characteristics of banana peel IDF:To compare the effect of three kinds of treatments abovementioned by determining the swelling capacity (SWC),the water holding capacity(WHC),the water binding capacity(WBC), the oil holding capacity (OHC) and the holding capacity of sodium cholate of banana peel IDF.Results1 The optimal parameters of extracting banana peel SDF was as follows:for amylize:enzyme concentration 1ml/g, pH5.5, temperature 85℃, hydrolysis time 60min。for protease:enzyme concentration 0.004ml/g, pH7, temperature 55℃, hydrolysis time 90 min. The yield of SDF is 14.67%, and the results is stabile.2 The contents of banana peel TDF,SDF and IDF of different maturation is different. the same are the physicochemical characteristics of banana peel IDF. The content of banana peel TDF and IDF decrease with the grow of maturation. The content of banana peel SDF increase, the SWC,WHC,WBC,OHC and the capacity of sodium cholate holding of banana peel IDF in different maturation only have a little difference, and do not change regularly with the grow of maturation.3. The optimal parameters of extracting banana peel SDF attained by using cellulose is:enzyme concentration 0.6ml/g, pH7.0, temperature 35℃, hydrolysis time 11h. under this conditions, the extraction rate of SDF content increased significantly.4 The optimal parameters of extracting banana peel SDF attained by using the pretreatment of Ultrasonic Dispersion and Botulinum Cook with the yield of banana peel SDF as the optimization index is as follows:Ultrasonic Dispersion for 60min, at pH9.5, the ratio of liquid to material is 30:1, Botulinum Cook for 30 min. under this conditions,the extraction rate of SDF significantly increased.5 The study compared the physicochemical characteristics of banana peel IDF abtained by the treatment of amylase and protease, cellulase, Ultrasonic Dispersion and Botulinum Cook, respectively.The result indicates that the banana peel IDF abtained by the treatment of Ultrasonic Dispersion and Botulinum Cook has the best physicochemical characteristics.ConclutionThe study identify that the best method to chang characteristics of banana peel DF and extract the banana peel SDF is the physical method of Ultrasonic Dispersion and Botulinum Cook by comparing some indexes of banana peel DF. Moreover, the banana peel DF extracted by this approach has fine physicochemical characteristics and good function of defecating feces and adjusting blood-fat. Therefore, extracting banana peel DF has great development and utilization prospects.
