In this paper, a new method for discriminating the Chinese spirits based on fluorescence spectra measurements is provided. The most important section of this method is inducing characteristic of fluorescence spectra of liquor and the main ester monomer material in some famous kinds of Chinese spirits by fluorescence spectra measurements and analyzing the practicability and rule of fluorescence spectra of liquor and the main ester monomer material.The major fluorescence spectra of ethyl acetate, ethyl caproate, ethyl lactate, ethyl butyrate, phenyl ethyl acetate, ethyl amyl should be obtained by experiment firstly. Then characteristic, difference and intercommunity of fluorescence spectra in these ester monomer materials can be induced and analyzed by three-dimensional fluorescence spectra analysis and discussion. The range of ester fluorescence peak is(λex:225-490nm,λem:300-705nm)and the fluorescence peak position isλex/λem=0.6-0.8. Different number of fluorescence peaks and different fluorescence intensity. The fluorescence intensity of phenyl ethyl acetate and ethyl lactate are the strongest.The fluorescence spectra of Wuliangye, Gujing liquor, Shuanglun liquor, Langjiu and Xifeng liquor should be measured by experiment. The fluorescence spectra curve are fitted between six kinds of ester monomer material motioned above and five kinds of these liquor. The rules of fluorescence spectra of liquor and the main ester monomer material are induced by modulus analysis obtained from the experiments. A method of discriminating the Chinese spirits by detection technology is based on the research conclusion above.The analysis, conclusion and study of modulus analysis of three-dimensional fluorescence fingerprints between Yanghe liquor and Guoyuan liquor are obtained by fluorescence spectroscopy measurement system. The characteristic analysis of fluorescence is also obtained by fluorescence, fluorescence range, fluorescence intensity, peak excitation wavelength, wavelength scanning. Guoyuan liquor have one fluorescence peak, the range of fluorescence peak is(λex:280-390nm,λem:350-550nm). Yanghe liquor have five fluorescence peaks, the range of fluorescence peak is (λex:226-400nm,λem:308-615nm).A liquor classification discrimination method is provided by coalescent of three-dimensional fluorescence spectroscopy parameters, statistical analysis, and neural network classification recognition technology. Fluorescence spectra data of several kinds of liquor, for example Yanghe liquor, Guoyuan liquor and so on, can be obtained firstly. The compressed data obtained from Wavelet transform measurement can be as the input parameters of neural network. And discrimination result can be obtained from network classification recognition system.The research of liquor and the main ester monomer material provides a new method both for identification of liquor and the liquor flavor identification by photo electricity technology. It can help to improve quality of liquor.
