| The suitable varieties for the juice of Leaf orange, Beibei 447, ZhongYu NO.7, Snow orange and Xiachen were studied, and which accorded to the American pasteurized orange juice standard of 1983 to classficate; the different maturity of orange juice were deployed aiming at China of different production conditions, and discussed the optimal formula of mixed juice; Meanwhile, the pulp orange juice had been studied to make full use of citrus pulp resources, and the conclusions were as followed:1. The flexibility for the juice of five citrus varieties were studied, the the index parameters of citrus orange adaptability were established preliminary, and provides reference for processing adaptability of citrus varieties; the uniform design software was used to design the mixed juice program of NFC juice from different matures, and combination with intuitive analysis and regression analysis to determine the optimal scheme of test deployment.2.The deployment test results of two varieties, the optimum deployment proportion of Snow orange and xiaChen, zhongyu NO.7 and xiaChen, beibei 447 and xiaChen from medium maturing and Late-maturing varieties were 0.535:0.465,0.503:0.497. 0.675,0.325 respectively; the deployment of Leaf orange and xia chen from Late-maturing and Early maturity varieties got the best prescription 0.955:0.045;the optimum deployment proportion of Leaf orange and ZhongYu NO.7, Leaf orange and beibei 447, Leaf orange and snow orange from medium maturing and Late-maturing varieties were 0.535:0.465,0.503:0.497,0.675,0.325 respectively;3.The deployment test results of three varieties, the optimum deployment proportion of Leaf orange, beibei 447,xiachen was 0.074792:0.555366:0.369842; and,xiachen, beibei 447, zhongyu NO.7 was 0.114:0.19:0.696,and xiachen,snow orange,beibei 447 were 0.036:0.619:0.345.4. The factors of the varieties, the content of pulp additives, rotational speed, and stirring time were designed for the orthogonal experiment of the four factors and three levels on the pulp orange juice to get the optimal proportion of low, medium and high pulp type orange juice, the conclusions as followed:the optimal combinations of low pulp orange juice were ZhongYu NO.7,the additives of content of the pulp 7%, magnetic mixer speed 200r/min, stirring time 5min; the optimal combinations of medium pulp orange juice were ZhongYu NO.7, the additives of content of the pulp 9%, magnetic mixer speed 300r/min, stirring time 5min; the optimal combinations of high pulp orange juice were ZhongYu NO.7, the additives of content of the pulp 20%,magnetic mixer speed for 200r/min, stirring time 5min. |
