Pulsed electric field (Pulsed Electric Field) sterilization technology is an risen non-thermal sterilization method in recent decades. It can effectively kill microorganisms in food and passivate enzyme, while maintaining the original flavor of fruit and vegetable nutrients.Sterilization process is fast and safe. Freeze concentration is a non-thermal processing method. Proceeding at low temperature, it not only can preserve juices and nutrients in the flavor of fruit and vegetable well but also save energy and space for storage and transport. It can meet well the needs of the market. the combination of High-voltage pulse and Freeze concentration can solve the problem of sterilization in frozen concentrated products, also can reduce the current and temperature rising which is generated in the process of electric field sterilization, improving product shelf life and safety. This brief summary of the research carried out as follows:1 Using finite difference method for solving Laplace equation research the electric field distribution of the processing chamber: the electric field is the most intensive on the electrode wall, and is most sparse in the control center where field is the weakest; within the electrode of the treatment room add a number of parallel metal conductor to improve for treatment rooms, thus can compress electric field, make electric potential and electric field intensity of the processing chamber uniform distribution, greatly improving the effective electric intensity2 Various factors which affect High voltage pulsed electric field sterilization were studied: The sterilization effect on the microorganisms by the 3 mm, 5mm and 7 mm in three different electrode; Different role in the killing of microorganisms of the treatment temperature was 5℃, 10℃, 15℃, 20℃and 25℃. the killing effect of different microbe when electric field intensity was 26.66 kV / cm, 33.33 kV / cm, 40.02 kV / cm, 46.66 kV / cm, 53.33kV/cm; different pH values on the killing effect of different microbe; different Processing time in the killing effect of different microbe and so on.3 Pulsed electric field technology is used for PEF processing about frozen concentrated juice of loquat. study of material homogeneity and the impact on Loquat juice electrical conductivity degassing pre-cooling sterilization products .compared the PEF parameter of loquat juice and frozen concentrated juice .Comparison of different sterilization methods on the impact of microorganisms in loquat juice, compared the effect of microbe in loquat juice in different electrode diameter .4 Research a variety of quality changes of loquat juice during storage of in different treatment conditions, Triangle different test methods and Wilcoxon Test methods are used for significance analysis ,as well as the color, aroma and taste of sample.
