The storage factors, such as the reserve temperature and the relatively humidity, are the crucial factors of the technology on the storage of fruit and vegetable, so the study on the foundation storage facilities is particularly important. The paper designed and constructed a kind of temperature gradient storehouse of fruit and vegetable, which provided the condition facility to the critical factors of the control of the technology on the storage of fruit and vegetable.Based on the simulation of the temperature gradient storehouse under different conditions by using software of ANASYS, the temperature gradient storehouse was designed. The temperature gradient storehouse of fruit and vegetable uses the mother -son substructure, which consist of the static chamber, the buffer room and the gradient room, and use the special refrigeration equipment, BK-120. And the temperature gradient storehouse selects the all closed compressor and the air-cooled evaporator. The temperature difference of the gradient room can be set within±0.5℃, and the temperature difference of the static chamber and the gradient room >3℃, under the microcomputer control system. And configure the static pressure air blower in the gradient room, and the delivery speed of the air blower is 2.5m/s, the diameter of the inlet velocity profile is 0.2~0.3m.The temperature difference of the gradient room at different levels were within±0.5℃which is after the temperature and humidity field test, under the two states of the empty room and the loading fruits and vegetables room. The temperature which close to the ground level is lower than other level in the gradient room, and compared with the position of the top and the bottom, the temperature of the middle position is uniform, and the inhomogeneity of the top position of the temperature field is significantly higher than other locations, which similar to the results of the numerical simulation, and it can meet the needs of fruit and vegetable storage.The designed humidification devices could significantly improve the relative humidity of the gradient room, and the humidification devices can reduce the fruit and vegetable dehydration. Humidification treatment can significantly decrease the rate of the fruit and vegetable dehydration compared with control sample after 10 day's storage, rape(2.5 folds), celery(1.8 folds), green turnip(2.1 folds), apple(1.3 folds) and pear(1.5 folds). And the humidification treatment can significantly keep the hardening rate of fruit and vegetable, and obviously benefit to the decrease of the nutrients loss of the rape, the celery and the cucumber, and maintain a high content of the Vc and excellent appearance quality of the vegetable, which is benefit to the easy dehydration fruit and vegetable, such as rape and celery.
