Asparagus is one of the important export vegetables, and mostly exported by potted and deepfreeze product in our country. However, it has numerous useless materials during processing, which courses environmental pollution and resource waste. But there are abundant flavonoids in the asparagus peel. The flavonoids extracted from the asparagus peel could not only increase the value of vegetable and the income of farmers, but also make the vegetable waste be useful, which can realise green production in this expriment. Meanwhile, This research provided us a new resource and extracting technique of the flavonoids.The flavonoids were extracted from asparagus peel by the ethanol extraction as well as microwave, ultrasonic and cellulase assisted extraction, and their effects on flavonoid extraction were discussed in this expriment. At the same time, antioxidation of flavonoid was studied by different extraction techniques. The results were as follows:(1)The best condition of the ethanol extraction was:temperature75℃, ethanol concentration 80%, time 60min,quantity ratio of material and liquid 1:60, then the obtaining result of flavonoid of asparagus peel was 8.71mg/g. The results of the auxiliary microwave for the ethanol extraction was:microwave power 60%, ethanol concentration 80%, time 50s,quantity ratio of material and liquid 1:100, and at this condition, the obtaining result of flavonoid of asparagus peel was 6.55mg/g mg/g. The results of the ultrasonic reinforcing the ethanol extraction was:ultrasonic power 100%, time 75min, ethanol concentration 80%,temperature75℃, quantity ratio of material and liquid 1:100, and at this condition, the obtaining result of flavonoid of asparagus peel was 10.23mg/g. The results of the cellulase reinforcing the ethanol extraction was:cellulase concentration 80%, time 100min, temperature 50℃, pH 5.5, and at this condition, the obtaining result of flavonoid of asparagus peel was 11.75mg/g.(2)By comparing all the extraction methods listed above, we found that the extraction ratio of ultrasonic, microwave and cellulase degradation with ethanol all can extract the flavonoid effectively. Therefore, it is feasible to extract the flavonoid of asparagus peel with the methods of ultrasonic, microwave and cellulase degradation with ethanol.(3)On studying the activity clearing the superoxide anion and hydroxy radical of flavonoid of asparagus peel, the results indicated that flavonoid of asparagus peel was able to clear the superoxide anion and hydroxy radical. Furthermore, the clearing effect enhances with high concentration. In comparison with different extracting technique, it demonstrated that microwave ,ultrasonic and cellulase extraction with ethanol could improve the capability to clear the superoxide anion and hydroxy radical. We found that different extracting technique could effect the antioxidation activity of the flavonoid.
