The antibacterial wrapper coated with chitosan was prepared, and its properties, including basic performance, fresh-keeping packaging characteristic and antibacterial performance were studied for the fresh-keeping soft-packing of fruits and vegetables. At the same time, the interaction between chitosan and wrapper was investigated.1. The basic performance of chitosan and the antibacterial wrapper: The viscidity molecular weight of chitosan was 8.6×10~5 with 95% degree of deacetylate. The average packing mass of antibacterial wrapping paper coated with 1.5% chitosan , increased weight from 84 g/m~2 to 96 g/m~2, and the average coating amount was 12 g/m~2, and the coating thickness was 0.0165 mm, and resist tension enhanced from 12.7 N to 34.57 N.2. The fresh-keeping characteristic of antibacterial wrapper with coated chitosan: The wetting ability and permeability reduced as the concentration of chitosan increased.
