To determine the contents of resveratrol and procyanidins from grape skins, grape seeds and waste residue of grape wineries. Methods: High-performance liquid chromatographic method; Vanillin halogen acid colorimetric method. Results: l.The contents of resveratrol from grape skins are higher than that from the same kind of grape seeds (P <0.05) . Among the different kinds from the same area grape skins' resveratrol contents are significantly different. Among the same kinds from the same area the contents are graded in the order of the skins of waste residue of grape winery > the fresh grape skin>the old grape skin, and the differences are statistically significant (P <0.01) .2. The contents of procyanidins from grape seeds are higher than that from grape skins. Procyanidins contents are significantly different among different kinds of grape seeds and grape skins. The grape seed from the waste residue of grape winery named A has the highest content (8.43%).Conclusion: Grape skins and grape seeds are good sources of resveratrol and procyanidins.
