Oyster (Crassostrea gigas Thunberg) meat was studied and systematically analyzed as raw material, and bioactive substances including taurine, trace elements, protein and oligopeptides were determined in the thesis. Moreover the oligopeptides was screened for anti-tumor bioactivity and primary data on bioactive substances were provided for the next studies.Firstly, as there is abundant of taurine in Crassostrea gigas Thunberg, Taurine was extracted by water, isolated by aion exchange chromatography and purified by crystallization and recrystallization. Then, the structure of taurine was determined by IR ,TLC and NMR. Groundwork for industrialization was established through all the work above. Atomic fluorescent absorb spectroscopic analysis, atomic absorb spectroscopy analysis and flamboyance atomic absorb analysis were applied to determine the content of trace elements including Se, Cr, Zn, Cd, Co, Ni, Mo, Cu, Sr, Mn. The results indicate that the sample has a high Zn and Se content which are beneficial for human health.After the oyster protein content had been determined, the protein was hydro lysed respectively by trypsinase, pepsin, neutral protease etc and trypsinase was choosed to be used in the oligopeptides preparation. Oligopeptides were separated from the hydrolysate by Sephadex G-25 Fine. Ten elute peaks were collected and low molecular weight peak among those including Fr6, Fr7, Fr9, Fr10 were further studied.The structure of Fr10 was determined by HPLC and other spectrums(such as UV, IR, NMR) . It proved that Fr10 is tryptophan. At last, the hydrolysate for anti-tumorbioactivity was screened. The results proved that the oligopeptides have better anti-tumor activity, especially for P388 tumor cells. All those indicate that there are huge potentials for oyster to be used as marine healthy food and drug.
