The staphylococcal enterotoxins (SE) are a group of exotoxins produced by staphylococcal aureus. At least 8 distinct serological types of SE have been identified. Staphylococcal enterotoxin C (SEC) can be divided to 3 subgroups, SEC1, C2 and C3, according to differences in antigenicity. SE are single chain with low molecular weight of 27 to 30 kDa and exhibit several common properties, The capacity to cause gastroenteritis and emesis, superantgenicity, resistance to heat and pepsin digestion and similar three-dimensional structure. SE are definitely associated with staphylococcal food poisoning (SFP) and involved in the pathogenesis of multi-organ failure (MOF) caused by severe infection of staphylococcal aureus. Due to its inherent stability and high degree of toxicity, SE are also thought one of potential biological weapons.
