β-receptor agonist,zearalanol,glucocorticoids,steroid hormones are also called active substances in the animal husbandry industry.They are generally added to the feed,and used to raise the poultry growth rate,feed conversion rate and lean meat ratio or for the treatment of livestock diseases.Long-term intake of these substances will cause to human sexual function disorders and impact the normal development of secondary sexual characteristics, causing a series of diseases and even cancer.These four substances are prohibited by the International Olympic Committee.Melamine is a chemical raw material,and was added to original milk by lawless elements.This will lead to significant food safety case of melamine, which pose a threat to the infants and young children.There is an urgent need to establish a rapid,sensitive and accurate detection method for it.In this research,the analysis method of 25 kinds of stimulants in fresh meat,milk,eggs was reviewed,and the trends of them were also discussed.The harm of residue melamine in milk and dairy products was introduced,The principles,characteristics and applications of liquid chromatography-tandem mass spectrometry was also introduced.The researches of the analysis and application of stimulants and melamine residue in food are as follows:1.The method for screening four kinds of stimulants in fresh meat,milk and eggs was established.The process of the treatment of samples before analysis was also established. Moreover,the conditions of chromatography and mass spectrometry were optimized.For 56 meat samples which were supported to Olympic Games,the detection limit ofβ-receptor agonist was o.25ug/kg,the rate of recovery was between 75.4%and 102.8%,and RSD value was between 2.4%and 5.8%.The detection limit of zearalanol was 0.5ug/kg,and the rate of recovery was between 84.5%and 103.7%,RSD value was between 2.8%and 4.7%.The detection limit of glucocorticoid was 0.2ug/kg,0.5ug/kg and 1.0ug/kg,and the rate of recovery was between 85%and 96.4%,RSD value was between 2.3%and 4.1%.The detection limit of steroid hormones was 0.3ug/kg,0.4ug/kg,and the rate of recovery was between 89.1%and 102.5%,RSD value was between 2.4%and 5.1%. 2.The method of analysis of melamine residues in milk and dairy products by liquid chromatography-tandem mass spectrometry was established.The conditions of chromatography and mass spectrometry were optimized.The method was applied to detect 500 batches of the original milk,liquid milk,milk powder and yogurt,the detection limit was 0,01mg/kg,the rate of recovery was between 82.4%and 95.7%,RSD value was between 2.3%and 3.1%.These results provided the first-hand information to government departments and provided the initial conditions and data to set up a local standard.
