Honey has a high nutritional value and health functions and it is warmly welcomed by customers. In recent years, more and more attention has been paid to the quality of honey. The main component of honey is sugar. Honey can easily be adulterated and the methods of adulteration are various, so it is difficult to identify using the conventional methods. With the development of chromatography technology, the identification of trace components in honey has become a new direction to control its quality. In this paper, fingerprint of antioxidant components in honey was constructed by HPLC to provide a new idea for identification of variety and adulteration of honey. The main contents include the following four aspects.1. The detection method of polyphenols in honey by high performance liquid chromatography with electrochemical detection in series was established. The optimal chromatographic conditions of the determination of polyphenols in sunflower honey were established.2. The fingerprints of sunflower honey from different regions was constructed by HPLC-ECD. Sunflower honey from different regions were identified by similarity and cluster analysis. The results reflect regional differences of sunflower honey well.3. To construct fingerprints of 3 different botanical kinds of honey:sunflower honey, rape honey and jujube flower honey and to find regulations of compositional variation by comparing chromatogram maps of different kinds. The similarity with sunflower honey standard chromatogram map has been figured out. The results show that fingerprint method can identify the species of different honey.4. The fingerprints of sunflower honey adding different consistency of rice syrup was constructed. And the similarity with sunflower honey standard chromatogram map was figured out. Results show that, this method can only distinguish honey with serious adulteration, cluster analysis can distinguish honey with adding over 30% rice syrup.Keywords:Honey, Phenolic, HPLC-ECD, Fingerprint, Clustering analysis...
