In the summer of 1958, The public canteens quickly flourished and quickly dismissed in the summer of 1961. So to speak, they went through a zigzag course for four years. The thesis which taking XUSHUI county as a typical model, through the comparative depiction and the sociological analysis to some problems in the winded development in the public canteens ,will probe the relevant interpretation to explore the social value and significance which secluded in the public canteens and the complex interactive relationship.
