Nicandra physaloides is a kind of Common plant in Southern china which is used formedicine.The withanolides compounds contained in the plant is a kind of functional componentswhich have good physiological activities. Nicandra physaloides seed oil is rich in unsaturatedfatty acid,linoleic acid accounted for a large proportion,so the seed have good using value andcan be used for the development of functional oil.In this paper, we used the ultrasonic assistedextraction technology to extract oil from Nicandra physaloides seed and confirm the optimumextraction process.We used the white granulated sugar,citric acid,β—cyclodextrin as rawmaterial, developed the new product—Nicandra physaloides seed oil oral liquid.The fuzzymathematics of sensory evaluation were use to evaluate the sensory quality of Nicandraphysaloides seed oil oral liquid and the optimum technological conditions were determined.Inthe process the emulsion stability of the oral liquid was investigated and through orthogonal test,the optimum process parameters of Nicandra physaloides seed oil emulsion stability weredetermined.In this paper, the petroleum ether, ethanol, n-hexane and ethyl acetate were selected assolvent. Through the single factor experiment, the extraction rate of organic solvent, toxicity, theaverage relative deviation were selected as reference index.The ethanol as extraction solventwas selected and the extraction rate was21.7%.This paper determinethed the anhydrous ethanol as extraction solvent.Orthogonal test ofthree factors and three levels was based on single factor experiment,using Nicandra physaloidesseed oil extraction rate as index, the optimal process parameters for ultrasonic assistedextraction of pseudo Nicandra physaloides seed oil were: ultrasonic power320W,ultrasonic timeof40minutes,the ratio of material to liquid1:14.Under these conditions, we can extract theNicandra physaloides seed oil at the highest rate.Because the optimal set of orthogonalexperiment were not included in the9orthogonal table, the experimental results should beconfirmed again, According to the optimal conditions,the3test were carried out and theextraction rate of Nicandra physaloides seed oil was24.58%.The extracted oil must be required to make into a stable emulsion after it was purified.Theoral liquid emulsion stability plays a vital role in sensory quality.Discussingon theemulsion stability of oral liquid is the focus and difficulty in this experiment.Strong emulsifying capacity emulsifier should be need to make the oil-water two-phase solubilize.Three kinds ofo/w emulsion:sodium stearoyl lactylate(SSL),Twain-80,sucrose fatty acid ester(SE-13),theturbidity(T10) as the index,to explore the mulsifying ability of these three kinds ofemulsifier.The emulsify in ability of sodium stearoyl lactylate(SSL),Twain80is more betterthan sucrose fatty acid ester(SE-13). In order to improve the emulsification effect, monomeremulsifier need to admixly use.The experimental results show when the composite proportion is6:4, the effect of emulsification is the best.In order to stabilize the system of oil-watermiscible,excellent stability of stabilizer need to be selected. The three kinds of familiar stabilizer——CMC、guar gum、xanthan gum were seleted in this experiment,the emulsion stability ofsystem(ES)as an index,the xanthan gum to be proved is the best.The emulsion stability is thebest when the use level of xanthan gum is0.25%.In this experiment, the sodium stearoyl lactylate(SSL) and Twain-80at the composite ratioof6:4and xanthan gum as a stabilizer were setted.And then carry out the single factor test,theemulsion stability(ES)as an index,to ensure the optimal process parameters.On the basis ofsingle factor experiment,the orthogonal test of four factors and three levels were carried out.Thebest process parameters of optimal oral liquid emulsion stability were comfirmed:Nicandraphysaloides seed oil2%,composite emulsifier0.1%, xanthangum0.3%, homogenizingtimes4.Since the optimal set were not included in the9orthogonaltable,the experimental resultsshould go a step further. According to the best optimal combination,3times test were carriedout.The emulsion stability of average value was98.62%.To product the the oral liquid which isfrom Nicandra physaloides of seed oil according to the combination, The stabilization time islongas5months.To use the white granulated sugar,citric acid,β-cyclodextrin,Nicandra physaloides seed oilas raw materials to product the the oral liquid which is from Nicandra physaloides of seed oil.Tocarry out single factor test and use the fuzzy mathematics of sensory evaluation to assess thesensory quality(the sensory scores for the indicators),the optimum deploying technics wasdetermined. On the basis of single factor experiment,the orthogonal test of four factors and threelevels were carried out. The optimalprocess parameters for the deployment of oral liquid were comfirmed as:sugar8%, citricacid0.1%, β-cyclodextrin0.015%, oil3%. To use the recipe after three times ofconfirmation,the sensory score was84.24, exceeding the maximum sensory score81.69which isfrom orthogonal experimental group.
