With the improvement of people’s living standard, people on the liquor also changed,liquor is distilled wine in traditional Chinese, is one of the world’s eight distilled liquor in thelong process of development of its unique style and excellent flavor by the majority ofdrinkers likes to have a broad market at home and abroad.This paper mainly studies the difference between solid fermentation liquor and non solidfermentation liquor, respectively from the concept of the difference, the difference betweenthe production process, and then to the difference between the various experimentalphenomenon to analyze and research.The test method of titration of total ester, observe the phenomenon to distinguish thedifference between the two kinds of wine, combined with gas chromatography detectionmeasured how much liquor contained in alcohols, esters are distinguished by the solidfermentation liquor and non solid fermentation liquor, sweeteners may contain combined withliquid chromatography test liquor to distinguish in liquor by solid fermentation and nonsolid-state fermentation liquor, through comparison of liquor by solid fermentation and nonsolid-state fermentation liquor conductivity to distinguish these two kinds of liquor. Througha series of research and comparative conclusions, has the obvious difference with solid-statefermentation liquor by solid fermentation liquor and the experimental phenomena of totalacid, gas chromatography the difference between the peak number, is there a differencebetween added sweeteners, conductivity also exist difference.
