Rice wine production is a very complex process, a lot of conditions influence rice winebrewing process. The study on high efficiency liquid rice wine production technology is veryimportant to improve the efficiency of rice wine production and it has an importantsignificance to reduce rice wine production cost. Through the single factor experiment, mainconditions which influence rice wine production process were determined, and through designcombination experiment to optimize rice wine production process, as a result, high efficiencyliquid rice wine production technology was established. Through the determination ofimportant indicators such as total acid, total ester, conductivity, acetic acid, ethyl acetate, ethyllactate in rice wine, in combination with sensory evaluation, we set up the quality standards ofrice wine evaluation, providing theoretical support for high efficient liquid rice wineproduction technology.Through the exploration of different fermentation process conditions, the mainconditions which influence the rice wine production fermentation process are: thefermentation time, the fermentation temperature, the initial add of nutrients or strains, thedifferent fermentation period time of mixing or dissolved oxygen. The optimizationexperiments consider some main factors affecting the rice wine production fermentationprocess, choosing the main conditions that influence the fermentation process to designcombination optimization experiment. The level factors of fermentation temperature are:30-34℃,31-33℃,32-34℃; The level factors of fermentation time are:11days,13days,15days; The different fermentation period time of mixing or dissolved oxygen are: shaking thecontainer twice a day for5days start from the six day, dissolving oxygen twice a day for5days start from the six day, shaking the container and dissolving oxygen twice a day for5days start from the six day; The level factors of different additives are: the angel yeast,glucoamylase, yeast extract powder. The study confirmed that the best fermentationtechnology conditions of high efficiency liquid rice wine production technology are: thevariable fermentation temperature is32-34℃, the fermentation time is13days, include mainfermentation for5days and the secondary fermentation for8days, shaking the container and dissolving oxygen twice a day for5days start from the six day when the process is on thesecondary fermentation phase, the additives is glucoamylase.Comparing with the enterpriserice wine fermentation process,this process shortened the fermentation process for twodays,while the enterprise brewing cycle is15days,and the shorten ratio is13.3%.Established the method of using gas chromatography to detect the important flavoringsubstances in rice wine, such as acetic acid, ethyl acetate and ethyl lactate.
