Different beef stock has difeerent characteristics of volatile compounds. In this paper, theauthor chooses the yak beef stock and Qinchuan beef stock as research object, andcommercial beef stock uesd as a control sample, using the GC-MS to test the volatilecompounds in various beef stock. Based on common peak and principal component analysis,the compound fingerprint of yak beef stock and Qinchuan beef stock can be establishedrespectively. Then the cluster analysis is used verify the effectiveness of the two differentmethods to establish the scientific of the fingerprint. The experiment results are as follows:(1)The different kinds of beef stock are used GC-MS for the determination of volatilecompounds. There are40volatile compounds found in yak beef stock, and there are46volatile compounds found in Qinchuan beef stock. It is found that these beef stock containshydrocarbons, alcohols, aldehydes, ketones, esters, aromatic compounds, heterocycliccompounds and others. Among which, aldehydes is the most highest volatile compounds,control beef stock is highest(89.66%), while Qinchuan beef stock takes the second place(73.72%), and the lowest is the yak beef stock(69.38%). The content of hydrocarbons,alcohols, esters, aromatic compounds of Qinchuan beef stock are higher than other two beefstock.(2)Choosing nonyl aldehyde which retention time is about25.52min as a reference peak,got yak beef stock relative peak area of the volatile compounds (Sr) and the relative retentiontime (α) to establish16common peaks as the yak beef stock volatile compound characteristicfingerprint, and their relative retention time to focuses on0.276-1.541through the method ofcommon peak; Using PCA to verify the fingerprint of yak beef stock volatile compounds.Two principal components factor accumulation contribution rate get91.77%; Using clusteranalysis to verify the fingerprint of yak beef stock volatile compounds. It is found that whenthe Euclidean distance of10the result is divided into two groups. It is proved that theestablished fingerprint of yak beef stock is efficient.(3)Choosing nonyl aldehyde which retention time is about25.52min as a reference peak,got Qinchuan beef stock Sr and α of the volatile compounds to establish37common peaks asthe Qinchuan beef stock volatile compound characteristic fingerprint, and their relativeretention time focuses on0.186-1.698through the method of common peak; Using PCA toverify the fingerprint of yak beef stock volatile compounds. Two principal components factoraccumulation contribution rate get88.61%; Using cluster analysis to verify the fingerprint of yak beef stock volatile compounds. It is found that when the Euclidean distance is10theresult is divided into two groups. It is proved that the established fingerprint of Qinchuan beefstock is efficient.(4)Using the PCA to analyze the volatile compounds of yak beef stock relative content,the two principal components factor accumulation contribution rate is91.35%. According tothe load of volatile compounds and relative content, establishing the yak beef stock volatilecompound fingerprint with hexanal, heptanal, trans-2-heptenal and8kinds of volatilecompounds; Using cluster analysis to verify the fingerprint of yak beef stock volatilecompounds. It is found that when the euclidean distance of5is divided into two groups. It isproved that only selecting8compounds based on principal component analysis can achievethe similar result to the fingerprint based on traditional methods.(5)Using the PCA to analyze the volatile compounds of Qinchuan beef stock relativecontent, and the two principal components factor accumulation contribution rate is88.04%.According to the load of volatile compounds and relative content, establishing the Qinchuanbeef stock volatile compound fingerprint with heptanal,2,3-octanedione,2-undecanone and11kinds of volatile compounds; Using cluster analysis to verify the fingerprint of Qinchuanbeef stock volatile compounds. It is found that when the Euclidean distance of10is dividedinto two groups. It is proved that only selecting11compounds based on principal componentanalysis can achieve the similar result to the fingerprint based on traditional methods.To sum up, using common peak to establish fingerprint can achieve the purpose ofclassification identification. At the same time, based on PCA can effectively distinguishdifferent kinds of beef stock of volatile compounds. It is proved PCA can used as an effectivemeans to establish fingerprint, which is reliable and practical.
