Natural Vitamin E, also known as tocopherol, is a fat-soluble vitamin, and the essential vitamin for people’s physical activity. It can promote the secretion of sex hormones and improve fertility, it can also prevent miscarriage, cure burns, frostbite, capillary bleeding, menopausal syndrome and so on. However, vitamin E is insoluble in water, and become instability while meet acid and alkali and it can be oxidized in case of oxygen or high temperature. All of which greatly limit the vitamin E’s application. DHA (docosahexaenoic acid) is one of polyunsaturated fatty acids. It is not only play an important role in the structure of the retina but also inhibit inflammation. It can also enhance the body’s immune and has the anti-tumor function. However, the DHA is highly unsaturated and greatly sensitive to the oxygen, light and heat, which make the fish oil vulnerable to loss the physiological function and nutritional value. By microencapsulating the natural vitamin E and fish oil which has rich DHA, making them isolating from the environment and preventing them from the oxidative deterioration and at the same time protect their physiological function and nutritional value. It can also cover up their bad smell and expand the scope of their application.DHA fish oil microcapsules were prepared by coacervation method. Through the experiment, we confirmed that the wall materials are the gelatin and Arabic gum, the hardening reagent is TG enzyme, and the optimum process is60%fish oil,40%gelatin and Arabic gum and anti-oxidant in50℃~60℃water bath to fully dissolve in the dispersion, and high pressure homogenization (40MPa) emulsified. Then keep the temperature at40℃and adjust pH of4.0for coacervation reaction. The spray drying conditions are inlet temperature180℃, outlet temperature80℃. And the results showed that the stability of the product is very good, and it also can cover up the fishy smell. The water content and surface oil can be controlled below1%, and the stability of the powder in hot water is also very good.By using the method of O/W microemulsion to make the emulsification of the natural vitamin E, and then get the microcapsules powder by the method of spray drying. Through the experiment, we confirmed that the wall materials are the purity gum (GUM2000) and sucrose, the emulsifier is the sucrose ester S1570(HLB15), and the optimum process is35%natural vitamin E,42%purity gum,21%sucrose,0.5%emulsifier,1.5%anti-oxidant in50℃~60℃water bath to fully dissolve in the dispersion, and then high pressure homogenization (40MPa) emulsified twice. Spray drying conditions are inlet temperature180℃~190℃, outlet temperature80℃, and the result showed that the natural vitamin E powders can be in good condition. The product can be rapidly dispersed in the aqueous system, and form a homogeneous emulsion, and the water content and the surface oil can be controlled below1%. The products also have good storage stability.
